Strawberry, Valentine & Chinese New Year

There isn't any particular linkage between strawberry, Valentine & Chinese New Year.
However, this year Chinese New Year is the same day as Valentine, & I made heart-shaped strawberry yogurt mousse cakes, this became a wonderful desserts for this particular day!

This year is a year of Tiger!

Strawberry Yogurt Mousse Cake
Recipe (6'' round/6 ramekins):
Crust:
70g digestive biscuit crumbs
30g butter (unsalted & melted)

Mix the crust ingredients & press into a pan/ramekins, cool in a fridge.

Yogurt mousse:
80g strawberry yogurt
125ml whipping cream
25g sugar
1 sheet of gelatin

Soften the gelatin in cold water for a few minutes, then squeeze out the excess water.
Whisk the whipping cream with sugar until firm, fold in the yogurt.
Mix 1 tbsp of whipped cream with the soften gelatin & melt it using the microwave 2030 sec.
Fill in the prepared pan/ramekins then freeze to set.

Strawberry Jelly
100g fresh strawberry (blended into puree)
25g sugar
1 sheet of gelatin

Soften the gelatin in cold water for a few minutes, then squeeze out the excess water.
Boil the strawberry puree than add in the soften gelatin, mix until dissolve.
Let the syrup cool down & pour over the yogurt mousse, freeze to set.

Decorate with fresh strawberries or as you like & serve.

  3. You are sooo talented! I just found your blog and I have been drooling at all the pictures/ recipes... It's really inspired me! Did you teach yourself how to bake/decorate everything? I am still trying to learn all the techniques... a lot of experimentation in the kitchen still to do!
