Chocolate & Peach Flognarde


It has been raining for a week & it is chilly.
It's not what I expected for the summer time, but I live in London!
Weather is unpredictable here.
When it rains so badly, it's great to stay indoor & enjoy a warm chocolate dessert.
I baked these chocolate flognardes with peaches.
Simple yet satisfying.

Recipe (4 ramekins):
adapted from Citrus and Candy
Sweetened Peaches
3 semi-ripe peaches, cored & quartered
20 g butter
3 tbsp sugar

Melt butter & sugar in a pan over medium heat, cook the peaches for 3-5 min or until it is just tender.
Set aside to cool.

Chocolate Flognarde
2 eggs
70 g sugar
65 g dark chocolate 72%
20 g cocoa powder
40 g plain flour
200 ml soya milk
Pinch of sea salt

In a large bowl, melt chocolate using microwave then combine with soya milk.
In another bowl, combine eggs & sugar.
Sift in sea salt, cocoa powder & plain flour, whisk gently until smooth.
Pour in the chocolate milk & mix until smooth.
Divide into the ramekins & top with the peaches.
Bake in a preheated oven at 170C for 25-30 min.
Remove from the oven & serve warm.
