Doughnut Muffins


Hi,
I have been travelling & taking a long break while looking for jobs since finishing my PhD.
The cities I have been so far are Venice, Budapest, Paris and New York.
My photos are now piled up & the worst is I’m procrastinating, I will need to be organised & get back to baking.


I made these doughnut muffins a while ago & I thought I will post the recipe here just to keep it going.

Cream Cheese & Whipped Cream Cupcakes


I baked these lovely cupcakes for my breakfast last week.
As a chocoholic myself, putting chocolate truffles inside is what I always do.
I usually warm the cupcake in a microwave so I'd have a melting chocolate centre, plus it's great with a cup of mocha :)
These cupcakes are moist, fluffy & light!

Pear & Chocolate Wholemeal Muffins


It has been a long time since my last post.
I had been away to my home country Malaysia & also visited Hong Kong & China mainland.
It was hard getting back to work after a long & relaxing holiday, so I'm catching up my work & back to my 'old' life.
It was a great trip & I will post some photos of my trip after I sorted them out.
Meanwhile I'm sharing a simple recipe of chocolate muffins.
I didn't have time for food shopping so I used what I had in the kitchen, it turned out great.

Jewellery & Muffins


I haven't been very productive recently, especially in making jewellery.
I don't know what to make & bake, sometimes simply not in the mood to.
But I keep up with making muffins as I have muffins for breakfast.
I don't always post the recipe for muffins as I use the same recipe again, with a little variations, like using different fruits, spice, tea, coffee or cocoa.
I just have to post these raspberry & apple muffins, it's soft, moist & sweet.
I got inspired by a new book I bought from WH Smith, it was on sale for only £6.
I was stunned by the price & I quickly grabbed one before it sells out.
It's a great book, packed with great photos & lots of inspirations!
I couldn't wait to try out the recipe of coffee & caramel muffins for my next week breakfast :)

Low-Fat Chocolate Cherry Muffins


With the cherries, I baked some chocolate cherry muffins.
I called it low-fat because it has less butter compared to the recipe I always used.
I always bake muffins for my breakfast so now I can have healthier muffins.

Would you like a cup of coffee?


This is a Mochaccino cupcake, not coffee!
I bought a new cookbook with pretty pictures & lots of inspirations.
I didn't follow the recipe exactly as it has coffee liqueur which I don't like.
But I like the idea.

I didn't like to drink coffee, because of the bitter taste.
I'm getting used to the taste & smell of coffee now.
The one I love is Mocha.
A wonderful combination of the bitter from coffee & the sweetness from chocolate.

Mochaccino Cupcakes
2 eggs
80g butter
25g dark chocolate (70%)
150ml milk
120g caster sugar
2 tbsp instant coffee
20g cocoa powder
250g self-raising flour

Decorations:
200ml heavy cream, whipped
Cocoa powder for topping

Butter the cake moulds or line with cupcake cases.
Combine the chocolate, milk & coffee in a small saucepan; stir over low heat until smooth.
Beat soften butter, sugar & eggs in a large bowl with an electric mixer until light & fluffy.
Stir in sifted flours, cocoa powder & warm chocolate mixture, mix until smooth.
Fill the prepared moulds until 2/3 full. Bake in a preheated oven at 180’C for 25 - 30 min.
Remove from the oven, cool on a rack.
Remove cases/moulds from cakes, put them in coffee cups.
Pipe whipped cream on the top & sprinkle with cocoa powder.

Chocolate Banana Muffins

I went back to Basildon last Friday for Christmas & to help in my mum's takeaway.
Although there's no college to work for, I still work hard in baking.
My mum promised to give boxes of cookies to her colleagues.
So, I was very busy in baking cookies.
Well, I did have sometimes to bake some muffins for my breakfast.

Recipe:
100g unsalted butter
200g self-rising flour
2 eggs
100g sugar
110g banana
1/4 cup milk
30g chocolate chips
1/2 tsp vanilla essence

Beat the softened butter with sugar until smooth.
Add one egg at a time and then beat until smooth.
Blend the banana and milk together, then add it into the batter, mix well.
Fold in the flour until smoothl.
Add chocholate chips and mix well.
Bake at 180'C in a preheated oven for 25-30 min.

Choc Chip Muffins~


I made some muffins last week.
This was the 1st time to bake muffins.
I shared one with Seiko soon after I baked it.
Again, it was about 10 pm, shouldn't have eaten anything~

As I don't like to eat something sweet, such as white chocolate, caramel...
But I think it's really good as it's not too sweet, so suit my taste.
Then, I was thinking maybe I could replace brioche rolls with muffins as my breakfast.
Well, I'm always lazy, so it's just a thought~
But, I wanna make the muffins with other flavours next time.
I'm thinking of lavender, rose, orange, lemon etc.

Recipe:
100g sugar
100g butter (unsalted)
250g self-raising flour
2 eggs
1 tbsp milk
50g plain chocolate chips

Butter (softened) + sugar, beat until fluffy & smooth.
Add one egg at a time, mix well.
Stir in sifted self-rising flour.
Add milk & stir well.
Add chocolate chips & mix well.
Fill a muffin tray with paper cases, then fill each case approx. 2/3 full.
Bake at 180'C in preheated oven for 30 min.
