Baked Tofu Cheesecake


Recipe update with a baked tofu cheesecake.
Simple yet delicious cheesecake to enjoy without feeling guilty.
It contains relatively less cream cheese and cream, so it’s healthier and lighter.
I drizzled some sweet osmanthus, it’s dried flowers if you don’t know.
It’s very popular in Asia either as herbal tea or as flavouring in baking and pastry.
I love it so I always stock a big bag in my kitchen.
If you don’t have it, you can add lemon zest instead, it’ll be great too.

Milestone in Life... Blueberry Cheesecake


I’m absolutely excited to say that I passed my PhD viva last week & now I’m a doctor, well, not official until I receive a confirmation letter from my university.
So, what next? (I got asked so many times)
The first thing I did was baking cakes from my kitchen, blueberry cheesecake & japanese cotton cake roll.
The plan afterwards is taking a break & slowing down for a bit, well, until Christmas then I’ll start looking for jobs in research & development.
I do miss all the fun of baking, food styling & photography.
I can’t wait to start baking, blogging & travelling.


The recipe I’m sharing is a chilled blueberry cheesecake, which I’ve made several times.
I finally managed to take some photos before it’s all gone :)
Blueberry cheesecake is my sister, Jenny’s best make, she is now busy working as a pastry chef in a hotel so I recreated the recipe for my family.
Don’t miss out the jelly layer, it’s absolutely delicious with the tangy cream cheese mousse & the nutty crust.

Scenes from Lake District & Orange Cheesecake for Summer


Recipe! I've finally got some times in the kitchen for cakes.
I've been away & also quite busy after the trip to Turin.
I went to Lake District for a short break with my family about a month ago.
Take a look at the videos I've made using the Animoto app.
It's a glimpse of the paradise, aren't the scenes beautiful?



Now it's July & it's summer, finally.
Everytime when I want to bake, chocolate is my top list.
As the sunshine finally out of the clouds in UK, I think it's time to have a more summery treat.
A chilled orange cheesecake, not so difficult to make & it will make a great dessert for barbecue.

Whisky & Raspberry Cheesecake




At one weekend, I went back to Basildon as usual by train.
At the station, the train was delayed so I went to the bookshop nearby & flipped through some food magazines.
I wanted to baked a cheesecake when I got home so when I saw there was a section on cheesecake in Food & Travel.
I bought the magazine without second thought.


All the cheesecakes in the magazine seem great & I baked the easiest recipe which I omitted the baked flapjack base.
The cheesecake wasn't overly sweet, so I drizzled some honey on top & served it with some tangy raspberries.

Sweet Potato Cheesecake with Streusel



Can't believe it's the 5th year of this blog.
In the beginning, the blog was begun as a journal for my handmade jewellery.
Then, I started to bake & soon addicted to it.
After getting a micro 4/3 GF1 camera, I had learnt a lot when I used it & so did the baking.
However, after getting the expensive Fuji x-pro 1 camera a few months ago, I haven't been taking photographs & baking very often.
Mainly because my Ph.D is now in final year, I get busy with research & feel more stress.
At weekend, I prefer to rest & not doing anything... but I bake sometimes, then I will update the blog.

Mother's Day & A Sweet Paradise


March is a very busy month, family birthdays & mother's day.
I've baked 3 cakes including this one this month.
 I made 'Jasmin' again for mother's day since my mum likes it.
My sister Kelly suggested to put in some bird's nest () in the jelly so I did.
This time I made it into a simple round-shape & garnished with white chocolate shards.
Spring has come & camellia has started to bloom in the front garden so I took a few for garnish.
My patissier-to-be sister Jenny had made us some chocolate macarons & a delicious blueberry cheesecake.
At the end of the day, we're a bit overwhelmed by the desserts.

One Apple, Two Blueberry Cheesecakes & Three A Trip to Lewes



It’s my friend’s birthday and she had special request for a baked cheesecake.
So, the night before I met her, I baked, not one but two small cheesecakes.


The recipe was actually for a 8” cake but we’re going to a historical & lovely town called Lewes.
It’s not a good idea to bring a giant 8” cake around.
The little cheesecake turned out great with simple arrangement of poached apples & my friend loved it :)
I cooked some blueberry jam & simply spread over the other cheesecake which I brought to my mum the next day when we had lunch together.



Lewes was an adorable town, full of antique shops, cozy cafe & cute crafts stores.
There is also a big flea market & it's like treasure hunting :)

Triple Chocolate Mascarpone Cheesecake



This is one of a few cheesecakes that I'll make again, not only because it's simple to prepare, yet the result has never failed me.
It's more like chocolate pots de creme, smooth & rich, I once called this killer chocolate cheesecake.
It's absolutely chocolatey.
A little inspiration is topping with chocolate ganache & dark chocolate sprinkles.
It is freezing in London & it's no more comforting than having a rich chocolate cheesecake in a warm sofa.

White Wine Cheesecake



I almost forgot to share this recipe, the photos were lost in my endless photo library.
I've created a new portfolio from 500px as you can see I've added a new badge & a new tab at the top :)
So, I'm reorganising my photo library at the moment.

Luckily, I have an iPad & I've used it to jot down note & recipe.
I barely remember what I liked about the cheesecake but the chewy bits & the subtle note of wine.. from my note.

Sweet Orange


I designed a cheesecake on a tart & drew it out.
I went shopping & bought all the things I needed.
At the end, I made something different.


Things don't always go as planned but it happens.
The cheesecake is great, I like the orange slices on the side & the ginger biscuit base.


I think the cake will look prettier with the cream on the tart but there was no whipping cream left when I decorated it.
It still tastes great & less calorie without cream :)

New York Cheesecake

If you read my blog regularly then you know I always bake cheesecakes.
I've been adventurous & tried to make various desserts & cakes in the past two months.
I've enjoyed baking & eating, also taking nice food photos.
I then left the cakes & food to my family & friends, my mum didn't like some of them unfortunately.
So, I decided to cheer her up with her all time favourite - a cheesecake!
This is a classic baked cheesecake but it's amazing!
Smooth & creamy yet tangy & refreshing.
You'll love it!

London & A Recipe



Apologised for not updating my blog frequently for the past few weeks.
My life was a bit chaotic & I tried to set my feet on the ground.
While I'm writing this blogpost, I'm really sad that there're riots across London & across the UK.
I love the city as it's historical, friendly & multicultural.
The rioters & looters not only destroyed shops & homes of innocent people but the fame of London which took decades to build.
I'm not here to criticise nor question the cause of riots.
I wish sincerely that riots have gone & the UK can be in peace once more.
Meanwhile, I'm sharing a recipe of the cherry & mint confit cheesecake.
I've never used peppermint tea in baking, it turned to be great.
The cheesecake was soft & creamy, the texture was silky smooth.
It's very satisfying & perfect with a cup of coffee.

Blueberry Yakult Cheesecake

I didn't keep up to update the blog, as I've been busy with my study.
Anyhow, I made a blueberry cheesecake using Yakult & yogurt.
Yes, Yakult... In Malaysia, I loved it when I was a kid.
At that times, it was one of the healthy drink that parents allowed & kids loved.
Now, there're other healthy drinks for kids.

Easter Trip & Recipe Sharing

In April, I took a long flight back to Malaysia which stopped over at Dubai.
Malaysia is a tropical country & full of passion.
I hadn't back to my hometown for 4-5 years, it was a great chance for me to meet my old friends & family, also enjoy the foods.
When it comes to friend gathering, it always come with eating & shopping.
There're a lot of shopping centres with food courts, even there's no food courts, there're surely restaurants & food stalks nearby.
I was truly spoiled by Malaysian foods :)

Coconut Soufflé Cheesecake with Caramel Pineapples


Spring has sprung & the winter has finally gone.
The sky was blue & the sun was bright while I was writing.
Sadly I didn't go outdoors but to bake in the kitchen.
After I baked a coconut soufflé cheesecake, I felt like something was missing.
I scanned through my recipe library for ideas & decided to make caramel pineapple to accompany the cheesecake.
It matches perfectly as coconut & pineapple always go together & the tropical flavours are the tastes for the summer to come :)
