Milestone in Life... Blueberry Cheesecake


I’m absolutely excited to say that I passed my PhD viva last week & now I’m a doctor, well, not official until I receive a confirmation letter from my university.
So, what next? (I got asked so many times)
The first thing I did was baking cakes from my kitchen, blueberry cheesecake & japanese cotton cake roll.
The plan afterwards is taking a break & slowing down for a bit, well, until Christmas then I’ll start looking for jobs in research & development.
I do miss all the fun of baking, food styling & photography.
I can’t wait to start baking, blogging & travelling.


The recipe I’m sharing is a chilled blueberry cheesecake, which I’ve made several times.
I finally managed to take some photos before it’s all gone :)
Blueberry cheesecake is my sister, Jenny’s best make, she is now busy working as a pastry chef in a hotel so I recreated the recipe for my family.
Don’t miss out the jelly layer, it’s absolutely delicious with the tangy cream cheese mousse & the nutty crust.

One Apple, Two Blueberry Cheesecakes & Three A Trip to Lewes



It’s my friend’s birthday and she had special request for a baked cheesecake.
So, the night before I met her, I baked, not one but two small cheesecakes.


The recipe was actually for a 8” cake but we’re going to a historical & lovely town called Lewes.
It’s not a good idea to bring a giant 8” cake around.
The little cheesecake turned out great with simple arrangement of poached apples & my friend loved it :)
I cooked some blueberry jam & simply spread over the other cheesecake which I brought to my mum the next day when we had lunch together.



Lewes was an adorable town, full of antique shops, cozy cafe & cute crafts stores.
There is also a big flea market & it's like treasure hunting :)

Blueberry Yakult Cheesecake

I didn't keep up to update the blog, as I've been busy with my study.
Anyhow, I made a blueberry cheesecake using Yakult & yogurt.
Yes, Yakult... In Malaysia, I loved it when I was a kid.
At that times, it was one of the healthy drink that parents allowed & kids loved.
Now, there're other healthy drinks for kids.
