A lovely birthday cake for my flatmate to celebrate her 21st birthday.
As she loves strawberry, a strawberry cheesecake was perfect for her.
The decoration is simple but yet eleagant, like the one I made last week.
Recipe (6'' round):
Crust:
70g digestive biscuit crumbs
30g unsalted butter (melted)
Combine all the ingredients & press into a 6'' round pan, refrigerate before use.
Strawberry yogurt cheese filling:
200g cream cheese
100g yogurt
100g strawberry (puree)
100g strawberry (chopped)
50g sugar
40g water
6g gelatine
100-150g strawberry (sliced)
Dissolve gelatine in hot water.
Whisk cream cheese with sugar until smooth.
Fold in yogurt, strawberry puree & then the gelatine solution.
Fold in the chopped strawberries, pour into the prepared pan then refrigerate to set.
Remove from the pan, arrange the strawberry slices in a rose shape.
